We buy from several suppliers rather than one, which is what makes the spread of grapes possible. Toto Wines is the closest of them, and they choose on the grower and the ground rather than the label.
The list holds a lot of different grapes on purpose, and a lot of different ways of making wine, from a 2014 cabernet franc from Bourgueil to a skin contact blend from Burgenland. Wine here works underneath the food rather than on top of it. Nobody should have to know any of this to order well.
